Recipe:

3 cups cake flour or sifted all purpose flour
1 ¼ cups sugar
½ cup milk
3 eggs
¾ cup butter
¼ tsp. salt
½ tsp. cinnamon
¼ tsp. nutmeg
1 ¼ tsp. baking powder

Topping:

½ cup brown sugar
5 tsp. butter
4-5 pineapple rings
4-5 maraschino cherries

How to Bake a Pineapple Upside Down Cake

Preheat the oven to 350 degrees while preparing the cake mix. Add the dry ingredients to a large mixing bowl one at a time. Stir until flour is blended in and no dry clumps are visible. The batter should be smooth and thick like a box mix.

Grease an 8 or 9 inch round cake pan. Place the pineapple ring on the bottom of the greased pan. Place a cherry in the middle of each ring and sprinkle the brown sugar over the top, coating the pineapple and the bottom of the pan. Pour the cake batter in the pan and bake for 20-25 minutes. Test with a toothpick or clean knife for doneness. Let cool for 10-15 minutes. Place plate over the top of pan and invert, cake will slide out on the plate.

You may substitute canned pineapple for the fresh pineapple and vice versa. If you do not have maraschino cherries they may be omitted. The cake will taste just as good without it.

Grease or butter the cake pan generously to help the cake slide out when inverted. The cake must be cool when you invert it or it will tear apart.

Pineapple upside down cake may be served while it is still slightly warm. Good served with a hot cup of coffee for an after-dinner dessert or snack.
