Parsley is one of the oldest edibles in the known world, though we use it primarily as a garnish today. The ancient world prized the plant for its subtle flavors and aesthetically pleasing look. Even the ancient Greeks used parsley to crown their Olympians. The two most popular verities are the curly-leaf and Italian strains.
For the ancient Greeks, celery and parsley were one in the same. Considering the leafy stock of celery, it’s easy to see how they could have made that assumption. They called it “selinon,” only occasionally using “petroselinon” to describe parsley specifically. The Romans also followed this ambiguous naming convention with “apium,” so it’s difficult for food historians to distinguish exactly which is which in ancient recipes.
The US uses both varieties of parsley, but preferred the curly-leaf until World War II. It was only after the war that parsley began to develop a following outside of ethnic neighborhoods. A passage from 1911 describes a supposed oil extract that comes from parsley, with properties that are “stimulating.”
Text from 1934 discusses how parsley is rich in vitamin A, and gives advice on choosing the Italian version over the curly-leafed. By 1948, it was common for parsley to be grown in the home garden, although it could be found readily in markets. Parsley has long been appreciated for the brightness it brings to a dish. It’s in season for much longer than basil or rosemary, and just a dash is enough to make any dish look a lot more palatable to guests.
